The Best Soup to Fight a Cold

My son is in kindergarten and since December has come home with AT LEAST 4 different cold viruses. We usually try to fight off the nasty side effects of a cold through various home remedies. One such home remedy is good ole chicken soup. However, I like to add garlic to the soup for its anti-inflammatory and antioxidant properties. I also like to add some cruciferous greens, because they contain high doses of vitamins A and C and are also great antioxidants. Enjoy my recipe below!

Chicken Soup to Combat the Common Cold (remember to use organic ingredients to get the best results!)

2 Tbsp organic coconut oil
Salt and pepper as needed for taste
3 lbs skinless, boneless chicken breast
3 large leeks, cleaned and sliced thin
3 carrots, diced into small cubes
3 celery sticks, chopped small
6 cloves garlic, diced small
2 tsp fresh thyme, minced
2 tsp minced rosemary
2 Tbsp flour
6 cups low sodium chicken stock
4 cups of chard, kale, beet greens, all sliced
1/4 cup parsley, chopped
